I’ve discovered the secret. Any college student finding themselves sharing close proximities with complete strangers or good friends should listen in… it’s pancakes.
I live with three other girls who aren’t into cooking and baking like I am, which is fine. Especially since this makes me the world’s greatest roommate on those Saturday mornings when I get up a little earlier to make pancakes for the whole crew.
I should also mention that these ladies are also used to the Hungry Jack or Bisquick mixes, but I can’t blame them because it is definitely what I preferred growing up. I would not even touch my mom’s homemade pancakes until recently. That is until a “Good Old Fashioned Pancake” recipe found it’s way into my heart and I have not looked back since.
This recipe is so simple and easy it will make your heart sing. Then when you see how much it makes, how little it will cost you, and how wonderful the pancakes taste, you will be surprised when your heart actually begins to jump for joy (be sure to brace yourselves).
So your next free Saturday morning after a long night of studying or not studying give yourself 20 extra minutes to whip up some pancakes and prepare for the faces of your roommates looking like children on Christmas morning when they walk, or drag themselves, into the kitchen to a plate of delicious pancakes. Here’s the recipe: (from Allrecipes.com)
Good Ole Fashioned Pancakes
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
In a large bowl mix together the flour, baking powder, salt and sugar. Make a well in the middle and add in the milk, egg, and butter; mix until smooth.
Heat a griddle or frying pan over medium heat. Pour or scoop batter onto the griddle using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
